+ when using oil for baking, to replace butter, I use 90gm of oil = 125gm butter.

+ when using spelt flour, do not overbeat cakes. The flour is lighter than wheat.

+ when making spelt bread, there is no need for labour-intensive kneading...there is less gluten to release. I     knead once, to combine and soften the dough and mix in the yeast. Leave to rise in the tin and bake.

SPELT BREAD (FOR BREADMAKER)
3 and a bit cups of spelt flour (I use half white, half wholemeal)
1 tsp dried active yeast
1 tsp sugar
1 tsp guar gum
3 TBSP oil
1 cup water
Place in this order in the breadmaker. Use the basic white bread setting, with the shortest kneading time. Don't be afraid to add a bit more flour if the dough is not a nice round ball. Dough shouldn't be sticking to the sides of the pan when it has been kneaded.
This same recipe works well without the breadmaker too. Just mix all together, knead till nice and rubbery, place in tin to rise, and bake at 180c for about 35 min. Should sound hollow when tapped.



ROAST VEGE SALAD W QUINOA
cut into cubes
1 potato
1 kumara
1 or 2 slices pumpkin or squash
1 beetroot
slice or cut into chunks
1 onion
1 capsicum
3 cloves garlic
1 carrot
a few mushrooms
...any other veges you like....(organic, of course...), the more colour, the better it looks.
Coat all vege with extra virgin cold-pressed olive oil
Sprinkle with cumin seed
Roast veges till soft then remove from oven and cool.
Boil till soft and cooked 1 cup of QUINOA (red quinoa looks lovely but white is just as nutritious).
Drain off excess water with sieve, cool, then press to remove as much water as possible.
Sprinkle the quinoa thru the veges. 
Add crumbled feta cheese, a few raisins and walnuts.
Droozle with balsamic vinegar and more oil if desired.
Salt and pepper to taste.
